    Cheap, easy recipe, that feeds an army, and is nutritionally dense. Checks more boxes than any other recipe I've got. Can be made vegan substituting the broth. Garden Stew with Red Lentils 1/2 Onion, chopped 1 leek, chopped 3 carrots, chopped 3 garlic cloves, crushed 1 knob ginger, grated 1c mushrooms, chopped 3 ripe tomatoes, diced 2 Tbs tomatoe paste 1/3c Wine 3 c Beef broth 1c Red Lentils Salt, pepper thyme, rosemary, bay leaf, parsley to taste Sautee veggies, adding garlic and ginger last. Mix in tomatoe paste, wine, herbs and spices. Reduce. Add beef broth and red lentils. Simmer uncovered 25 mins, stirring occassionally. Add water if too thick. Serve with Jasmine or Basmati rice. Enjoy!

    Crispy Blueberry Fritters with Cream Cheese and Dark Chocolate Chips 1 1/2c Flour 1/2c sugar 1/4 tsp salt 1/4 tsp baking powder 1c blueberry filling 1/2c milk 1 egg 1 tsp lemon juice 8oz cream cheese, softened 1/3c powdered sugar 1/4 tsp vanilla 2/3c dark chocolate chips Oil for frying Mix flour, sugar, salt, and baking powder. In separate bowl, mix milk, egg, blueberry filling, and lemon juice. In third bowl mix cream cheese, powdered sugar, vanilla. Pour wet ingredients into dry ingredients. Stir together; do not overmix. Fold in dark choc chips. "Swirl" in cream cheese frosting. Do not mix. Drop big spoonfuls into oil heated to 375°. Fry to preferred crispiness. ~4-5mins. Dust with powdered sugar. Enjoy warm or cold.

    Fresh Tomato Marinara 2 Tbs olive oil 1 onion, chopped 4 cloves garlic, crushed 1 tsp oregano 1/4 c wine 12 ripe tomatoes, chunked 1 Tbs basil Salt, pepper, red pepper flakes to taste Large saucepan, saute onion until soft, 5-10 mins. Add garlic, heat to fragrance. 1 min. Add wine. Reduce heat. Simmer until evaporated. Stir in tomatoes. Add salt. 1/4 tsp. Add oregano, red pepper flakes. Cover. Simmer 15 mins on low heat. Stir occasionally. Remove from heat. Allow to cool 10 mins. Destroy with immersion blender, or blend with a normal blender. Aim for a fine puree. Add basil. Continue to simmer on low for 30 mins uncovered. Stir occasionally. Perfection
