Fresh Tomato Marinara 2 Tbs olive oil 1 onion, chopped 4 cloves garlic, crushed 1 tsp oregano 1/4 c wine 12 ripe tomatoes, chunked 1 Tbs basil Salt, pepper, red pepper flakes to taste Large saucepan, saute onion until soft, 5- 10 mins. Add garlic, heat to fragrance. 1 min. Add wine. Reduce heat. Simmer until evaporated. Stir in tomatoes. Add salt. 1/4 tsp. Add oregano, red pepper flakes. Cover. Simmer 15 mins on low heat. Stir occasionally. Remove from heat. Allow to cool 10 mins. Destroy with immersion blender, or blend with a normal blender. Aim for a fine puree. Add basil. Continue to simmer on low for 30 mins uncovered. Stir occasionally. Perfection
