Cheap, easy recipe, that feeds an army, and is nutritionally dense. Checks more boxes than any other recipe I've got. Can be made vegan substituting the broth. Garden Stew with Red Lentils 1/2 Onion, chopped 1 leek, chopped 3 carrots, chopped 3 garlic cloves, crushed 1 knob ginger, grated 1c mushrooms, chopped 3 ripe tomatoes, diced 2 Tbs tomatoe paste 1/3c Wine 3 c Beef broth 1c Red Lentils Salt, pepper thyme, rosemary, bay leaf, parsley to taste Sautee veggies, adding garlic and ginger last. Mix in tomatoe paste, wine, herbs and spices. Reduce. Add beef broth and red lentils. Simmer uncovered 25 mins, stirring occassionally. Add water if too thick. Serve with Jasmine or Basmati rice. Enjoy!
